Under the guidance and supervision of the Executive Chef and within the limits of established Mais Al Ghanim policies is responsible for supervising a team of stewards and ensuring a comprehensive cleaning service is provided for the kitchen
Duties and responsibilities:
– Ensure the maintenance of a clean, sanitary kitchen by supervising utility staff and to actively work in stewarding
– Assign utility stewards to their station and allocate any special cleaning
– Ensure kitchen floors and walk-coolers and fridges are clean by inspecting the work of stewards
– Monitor dishwashers and makes corrections when needed
– Take inventory of existing dishware, silverware, and other supplies
– Supervise the breaking down and washing of all dishes and silverware
– Check work carried out by stewards to ensure high standard of work is undertaken and maintained
– Ensure storage and safekeeping of all cleaning materials and equipment
– Supervise the operation of cleaning equipment and tools, including the dish washing machine, hand wash stations pot-scrubbing station, and trash compactor.
– Manage the washing and disinfecting of kitchen area, tables, tools, knives, and equipment.
– Ensure clean wares are stored in appropriate areas.
– Observe that trashcans and dumpster area are well kept and maintained
– Report any defects to supervisor to ensure health and safety procedures are followed and to enable repairs to be carried out
– Perform additional related duties when requested by the Executive Chef
