Head Chef (Arabic Cuisine) – Zuhour Group

  • Manage the opening and closing of the kitchen.
  • Monitor ordering and receiving food products and other supplies from Central Kitchen and Main Warehouse as required for daily operations.
  • Ensure that all food and products are consistently prepared and served according to the restaurants recipes, portioning, cooking and serving standards.
  • Inspects products quality during and after preparation, and makes adjustments as required.
  • Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
  • Checking and maintaining proper food holding and refrigeration temperature control points.
  • Ensure that all equipment is kept clean and in excellent working conditions through personal inspection and by following the stores preventive maintenance programs.
  • Responsible for maintaining appropriate cleaning schedules for all the kitchen and keeping a very high standard.
  • Maintains safe working conditions for kitchen employees and resolves safety concerns quickly.
  • Attends to day-to-day problems and needs concerning equipment and food supplies; detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment, and/or other unusual condition.
  • Manages the kitchen staff through coaching and training, in order to improve performance and to achieve the kitchen objectives and targets.
  • Evaluates the performance of kitchen employees ensuring that reviews are delivered to the HR Department on time.
  • Suggests salary reviews, proposes personnel actions such as promotions and provides feedback to employees.
  • Maintains discipline, recommends and administers corrective actions.
  • Collaborates with the HR Department to ensure the proper administration of employees’ annual leaves.
  • Ensure the proper appearance (condition of uniforms) and grooming of all kitchen crew
    Maintains food production records, reports, and department files in an organized and timely manner.
  • Performs other duties pertinent to this job as assigned
